Breakfast Bar recipe ingredients

  • 1 ½ cups dry oats
  • 3 rounded TBSP Thrive Vegan Vanilla Protein powder
  • 2/3 cup blueberries
  • 70g natural nut butter (peanut butter or almond butter optional)
  • 1 TBSP ground cinnamon
  • 2 tsp vanilla extract (optional)
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/4 cup mini chocolate chips (optional)
  • 1 TBSP maple syrup (optional)
  • 2/3 cups water (approximate)

Steps

  1. Preheat oven to 350F.
  2. Grease or line a 8x8 square baking dish.
  3. Add oats, Thrive protein powder, cinnamon, salt, and baking powder to a large mixing bowl.
  4. Stir in natural nut butter, vanilla extract, berries, and chocolate chips.
  5. Gradually add the water, stirring to combine.
  6. Once combined, spread mixture evenly in the baking dish.
  7. Bake for 20 – 25 minutes, until a toothpick inserted in the middle comes out clean.
  8. Remove from oven and let cool to room temperature
  9. Slice into bars, portion as desired.

 

Note – The amount of water you will need will fluctuate based on the consistency of the nut butter you use. If the batter is too dry once all ingredients are combined, gradually add more water while stirring.

Also, frozen berries are great, just be aware they will make your batter wetter.
